Aging Fu Brick Tea: When Older Is Not Better

Updated أكتوبر 30, 2026

Fu brick tea can change substantially in storage. A clean, properly made brick may become mellower, but “older” is not a flavor in itself. Research comparing historic samples is especially interesting because it also records a point at which an old tea can lose the aroma and fullness that made it appealing.

What a historic sample comparison found

A Food Science study examined Fu brick samples produced in 1952, 1985 and 2008. Its sensory evaluation described a shift away from the newer sample’s flowering aroma toward aged notes. The oldest tea was much thinner and had little remaining tea fragrance. This was a comparison made at the time of the study, not a report on how those teas taste today.

The chemistry did not simply become “better”

The paper reported changes in polyphenols, amino acids, sugars and pigments, with caffeine showing comparatively little change. Such shifts can help explain softer astringency, deeper color or a different sense of sweetness. A higher or lower laboratory value is not automatically a better drink. Nor does reduced bitterness mean the caffeine has disappeared.

Three production years are not one controlled aging curve

Historic samples may differ in raw material, factory practice, flowering technology and storage as well as age. That limits how precisely we can attribute the results to elapsed years. The study illustrates possibilities rather than supplying a universal optimum age. It also cannot justify using the look of old leaves or fewer visible flowers to authenticate a vintage.

Keep the tea while it is enjoyable

Store according to the product’s instructions, with protection from damp, heat and odors. Taste small portions periodically with a consistent recipe and note whether aroma, body and finish remain satisfying. If a tea is losing its character, waiting longer need not reverse that direction. A documented older brick can be interesting, but age alone is not a guarantee of flavor, safety or future value.
