What Does Jin Jun Mei Taste Like? Aroma and Texture
A good cup of Jin Jun Mei often feels fragrant, smooth and gently sweet, with floral, fruit-like or honey-like impressions. Think of those words as a tasting vocabulary, not a recipe: a honey note does not mean honey was added.

Start with aroma, then taste the cup
Smell the dry tea briefly in a clean, warmed vessel. After brewing, notice how the aroma changes between the lid, the liquid and the empty cup. Take time to taste at a comfortable temperature; very hot tea makes fine distinctions harder to judge.
What creates the flavor?
Tea plants, fresh-leaf condition, picking and manufacturing all play a part. Photographs of shoots help explain the raw material, but fresh green buds will change appearance as black tea is processed. They are not supposed to remain bright green in the finished product.

Sweetness is more than a sugary first sip
Look for balance: some fresh briskness, a comfortable texture and a pleasant finish. A cup may seem sweeter as it cools. Roast, malt or sweet-potato associations can occur in black tea descriptions; the words alone cannot prove quality, origin or added ingredients.

What should the liquor and wet leaves look like?
Golden, amber and orange tones can all appear at different strengths. Fine hairs may float in the liquor. Observe clarity and the opened material, but avoid using one color or a fixed number of infusions as an authenticity test.

When the tea tastes too bitter or weak
Before rejecting the sample, check the dose and steeping time. Reduce the leaf weight or shorten the infusion if the cup is harsh. If it is too light, change one variable at a time. A tea can become bitter when over-brewed even if its origin and description are genuine.
Keep a simple note of the water, leaf weight and timing that worked for you. It is more useful than chasing a promise that every Jin Jun Mei must taste exactly like fresh longan or produce ten identical cups.
